Italian food recipes have a long history of traditions and are heavily influenced by local cuisines and ingredients. Each region in Italy ahs developed its unique cuisine and food specialties. There are many reasons for this- diverse climate that is conducive to growing specific ingredients in a particular region, the history of the region influenced by migration and culture mix, geography and topography, and of course, economic reasons that has given rise to the whole concept of gastronomy. The latter was influenced by ancients noble courts or peasant communities. In terms of local ingredients, there are some that are only found in Italy like white truffles. 

The regional differences in Italian food menu is way more pronounced than any other country in the world. India, however is a strong contender when it comes regional uniqueness of food. The reason for this is mainly the topographical and climatic differences across regions. Also, it was only in 1861 that Italy became a united nation. The fact that it was merely a confederation of states prior to that also explains the cultural and culinary differences.

Despite these wide differences, the Italian food menu is typically the same all over the country. The standard sequence follows the order of antipasto, primo, secondo, and dessert. The main regional differences lie in the sources of carbs, proteins and the choice of vegetables.
